Stir-Fried Dried Squid and Vegetables (NO Knife! Kitchen Shears) - Video Recipe

We received some dried squids when we visited the nearby shrine for our son's Omiyamairi (the first shrine visit) and my darling's Yakubarai (ceremony to drive away evil spirits). I decided to make a dish out of them.

It turned out to a very tasty and delicious stir-fried dish, goes great with white rice. Oyster-sauce flavor, with a hint of chive is obviously addictive. Very filling with lots of bean sprouts ;)

dried squid recipe
https://www.youtube.com/watch?v=LAHg88WH8To

You don't need a knife but use kitchen scissors / kitchen shears!

Of course, you can use regular squids.

FYI: Hatsumiya-Mairi (初宮参り) or Omiyamairi (お宮参り) is one of the traditional celebration events for Japanese babies. Whenever a newborn is over a month old, we bring the baby to a nearby shrine for a greeting (giving the invocation).

Okakiage (Food Wars! Shokugeki no Soma Inspired Crispy Fried Chicken) - Video Recipe

"Okaki" is rice crackers and "Age" means deep fried.

I received a request for Okakiage, which appears on Manga: "Shokugeki no Soma (Food Wars)". Cod fish was used in its episode; however, I used chicken which is familiar to everyone.

https://www.youtube.com/watch?v=CUjiBXPRea0

Of course you can use any rice crackers~ ;)

---------------------------------
Okakiage (Crispy Fried Chicken)

Difficulty: Very Easy
Time: 20min
Number of servings: 4

Ingredients:
500g (1.1lb.) chicken thigh with skin
1/2 tsp. salt
100g (3.5oz.) Kaki no tane (Rice Crackers)
vegetable oil for deep frying
lemon wedges

Directions:
1. Remove the skin of chicken if you don't like, cut into bite-size pieces, then season with salt.
2. Remove the peanuts from Kaki no tane. Place them in a Ziploc bag and break into small pieces. *You can use a food processor if you have.
3. Place it in a flat container and coat the chicken. Deep fry them in oil at 170C (338F) for 5~6 minutes, until they float up to the surface.
4. Drain well and serve on a dish with lemon wedges.

Lemon is a must! It makes the chicken very tasty and delicious. Of course ketchup goes good, too~.

How to Make Hug Bento Lunch Box for Very Fun Park's Exhibition 10th Anniversary

Taiwanese Artist "Cai Jie-Shen (蔡潔莘)" invented the character Hug: Let us hug each other today!. “Art” is not just an installation inside a room that you can see from afar and not touch. Cai Jie-Shen, one of the new-generation artists wants to promote the life of “art”, meaning to increase the amount of participation of visitors in his masterpieces. In the busy city, what kind of things can make us stop and breathe? And relax the highly stressed souls in all of us? What kind of places can allow you and me to relax our eyes and feelings? Perhaps it is here, in the arms of art!

I was asked to make Hug bento box for the Very Fun Park’s 10th Anniversary. Since it is a meaningful exhibition, I decide to participate as an artist with my creative bento.

2. Wrap Nori seaweed sheet with parchment paper, then wrap with the image of the character.
3. On a card board or a cutting board, cut out the image with a design knife. You can fix the shape later with brow scissors, so you don't have to be perfect about the edges. Make sure you don't lose any of the parts you cut out. Place them on a sliced cheese and wrap securely with plastic wrap so that it won't dry out. You can keep it in the fridge till the next morning when you pack your bento box :)
4. Mix your favorite rice seasoning into the rice. Leave to cool so that the cheese won't melt.
5. Put lettuce and rice in the Bento box. Then place the Dongguri cheese on top of the rice.
6. Put side dishes in the bento box to finish.

How to Make Onigirazu (Rice Sandwiches) - Video Recipe

Onigirazu is a new type of Onigiri (rice ball) becoming very popular in Japan recently in 2015.

Unlike Onigiri (rice ball), Onigirazu can be prepared quickly without making into a triangular or a ball shape but just by wrapping rice and the fillings in Nori seaweed sheet.

https://www.youtube.com/watch?v=xSAMUuFw5Hk

I think it is a great idea that you can wrap more fillings than the regular ball-shaped Onigiri. Also, it looks very pretty like sandwiches!!!

Try it out with your favorite fillings ;)

---------------------------------
Onigirazu

Difficulty: Very Easy
Time: depends on what you wrap
Number of servings: N/A

Ideas:
curry flavored rice + bacon and eggs
Yukari (red Shiso leaves rice seasoning) rice + Shiso leaves + sliced cheese
white rice + shredded cabbage + Tonkatsu (pork cutlet) + Tonkatsu sauce

Directions:
1. Place Nori seaweed sheet on plastic wrap.
2. Place rice in the center, then flatten it out.
3. Place the fillings on top.
4. Cover the fillings with rice, then flatten it out.
5. Fold the corners towards the center of the rice, then wrap tightly with plastic wrap.
6. When the Nori gets soft, cut into half.
